PaperMC is a Minecraft Software organization focusing on improving the Minecraft ecosystem with faster and more secure software.
Waterfall is a fork of BungeeCord, a proxy used primarily to teleport players between multiple Minecraft servers. Waterfall focuses on three main areas: Stability: Waterfall aims to be stable. We will achieve this through making the code base testable and discouraging practices that lead to proxy lag.
An expanded API.Paper extends and improves the Bukkit and Spigot APIs so that you and your developers have more features and functionality at your fingertips. All the meanwhile, Paper retains compatibility with plugins written for Spigot and Bukkit.
Paper is now craftable, and can be used to craft books. Paper can now be used to craft empty maps and empty locator maps. Paper can now be used to zoom in maps, using anvils. The Windows 10 Edition can now use the anvil, as well as the crafting table, to zoom in maps, just as Pocket Edition in general can. Spigot is an open-source Java project that lets users run their own Minecraft server and add plugins to extend the possibilities of their server. There are over 100,000 Spigot servers in existence today. This makes Spigot one of the most stable and diverse Minecraft servers available.
BungeeCord is a piece of server proxy software written by md_5 and the SpigotMC team that allows server owners to link Minecraft servers together so that players can jump between servers without having to disconnect and re-connect. BungeeCord is typically used by server networks that offer many game modes.

Starting the server for the first time
- Double-click your run. bat in the Spigot directory.
- Open eula.txt in the Spigot directory, and change eula=false to eula=true, if you have read the eula and agreed to the rules written down. You can find the eula here.
- Double-click run. bat again to start the server.
Spigot is generally a better choice for both large and small servers, as it will use memory and CPU much more efficiently than CraftBukkit. Spigot also runs more efficiently than Vanilla, even if you're not using any plugins. However, Spigot is prone to bugs.
As long as you stick to downloading them directly from Bukkit or Spigot, you should be fine. If you mean single player mods, then stick to sites like Curse (Minecraft mods on Curse).
Switching to Paper from Vanilla or Spigot is incredibly easy, simply set your server type to Paper. Despite how easy it is to switch, we highly recommend backing up your server prior to making any large changes to prevent the risk of data loss.

Paper is a fork of spigot which optimizes and changes things that spigot doesn't.
Yep! You absolutely can. Paper takes care to maintain compatibility with Bukkit plugins made by the community.
CraftBukkit is a modification of Minecraft's server software(Vanilla Minecraft). All plugins compatible with Craftbukkit are also compatible with Spigot, and it provides even more plugins to choose from, as this is the most popular server software used, reason why we recommend using Spigot for a server with plugins.
PaperMC is just a layer on top of the vanilla server. It just adds a ton of performance enhancements and serverside modifications called Plugins. You can join with the vanilla client without issues.
You won't go wrong with Paper, but you can do better. Tuinity provides improved performance with no drawbacks even for smaller playerbases, and Purpur is a fork of Paper with Tuinity patches built into it.
Tuinity: New non-ticking chunks feature (and why you should use Tuinity) Tuinity has recently added a feature that lets you set two view distances. One is the regular view distance where everything is ticking. The other is the view distance where you can see the chunks but they are not ticking at all.
Tuinity is a fork maintained by Spottedleaf that is "aimed at improving server performance at high playercounts." I've been running it on my server with no issues, and so far the performance is pretty damn good.
