The answer: You are right, shrimp is a low-fat, lower calorie source of protein. Shrimp is certainly lower in fat and calories than lean beef: Three ounces contains 31 grams of protein, eight grams of total fat, and 3.2 grams of saturated fat. Even skinless chicken breast has a little more fat than shrimp.

Prepare it
If the prawns are shell-on, you'll need to peel them. This can be done before or after cooking, but peeling them after cooking makes for a juicier, more flavourful prawn.Larger prawns will take a few more minutes. You can tell when prawns and shrimp are cooked, as they will turn a pink colour. As a guide, small - medium sized shrimp will take 3 - 4 minutes, large shrimp will take 5 - 8 minutes and jumbo shrimp or prawn will need 7 - 8 minutes cooking time.
When properly cooked, the exterior should be pink with red tails and the flesh is slightly opaque and a little “white” in color. Here's where it gets confusing because a “little white” may vary from cook to cook. If it is bright white in color, there's a good chance the shrimp are overcooked.
Sometimes when you buy raw shrimp you will notice a thin, black string down its back. Although removing that string is called deveining, it is actually not a vein (in the circulatory sense.) It is the shrimp's digestive tract, and its dark color means it is filled with grit.
Prawns and shrimp are sometimes criticized for their high cholesterol content. However, each actually provides a very desirable fat profile, including a good amount of healthy omega-3 fatty acids (3). They both provide a good source of protein, healthy fats and many vitamins and minerals, yet are low in calories.
Remove Wild Prawns from boiling water and place immediately in iced water to prevent overcooking. Repeat process until all prawns are cooked. Serve your perfect Wild Prawns just as they are, chilled on ice with lemon wedges, or accompanied by your favourite seafood dipping sauce.
Spoiled Shrimp Smell
Fresh shrimp should have little to no odor and smell slightly salty, like sea water. If the shrimp smells like ammonia, or if it generally smells slightly "off," don't purchase it.
