Parryable: Yes. Parrying them is effective when they swing horizontally. There is a powerful red-eyed version in Anor Londo to the right of the other two Silver Knights at the top of the stairs.
The Silver Knights do not drop humanity and farming them does not give any soft humanity.
Silver Knight. Silver Knight is an Enemy in Dark Souls and Dark Souls Remastered. Enemies are hostile creatures that respawn when players rest at a Bonfire or upon death. Special enemies that do not respawn are classified as Bosses, Mini Bosses or Invaders.
With the exception of the ones in the manor, the Silver Knights bleed black and respawn. Think about it. One doesn't have to be hollow to respawn though. The black Knights have lost their purpose - to escort Gwyn to the flame - and so they will have hollowed, hence their wandering.

Artorias is at the Colloseum of Oolacile because he was trying to make his way back to civilization after being nearly killed by Manus, but he knew he was becoming corrupted so he stays there. Would recommend doing Ornstein first if you're planning on doing NG+ (and killing Smough first second time through). If you want to just finish the game, killing Smough first is better.
Ornstein in dark souls 1, was an illusion. The sentinels in dark souls 1 are illusions that can hurt us. They evaporate, and make the same death sound that gwyneveres illusion does when it evaporates. No, we absolutely do not get his soul.
If you defeated Smough first, Ornstein will pray and absorbs Smough's power, becoming twice his size while retaining his lightning power and speed. If you defeated Ornstein first, Smough will simply kill the dragonslayer himself with his hammer and imbues it with Ornstein's lightning power.

I typically fight Ornstein and Smough at levels 40-60 (usually in the middle near 50) because that was prime coop range when DS was released. (I use to play on xbox.) It's easier to be invaded than find summons in this game.

The gods, like Gwyn or Gwyndolin, are not human and therefore do not go undead (neither of them drop humanity either like all of the human npcs you meet). It's more like a state similar or even mirroring the human hollowing.
The Nameless King, however, does not act like a hollow and appears to be every bit as powerful and skilled as you'd think a god would be. He has his lightning powers even when Gwyn lost his, he can freaking fly around and walk on clouds, and he rides a drake.
Gwyn is absolutely fast and powerful beast.
His weakness, despite appearances, is fire. But he is resistant to lightning damages. Besides, this is one of the bosses, which blows can be parried.
