The main difference is that the 1187 has a gas compensation system that allows everything from light 2-3/4" shells to heavy 3" loads like buckshot and slugs to be fired from the same barrel. For the 1100 you'd need two different barrels.
Barrels WILL NOT interchange between the 20ga 1100 and 1187.
The special purpose gun was a el chepo model which was designed to be used by an average everyday hunter that did not need a blued finish or fancy wood or any of the amenities of a higher priced shotgun. Some of them on special runs even came with 3 choke tubes from the factory and were very good shotguns.

Usually the difference between the 2 3/4 and the 3 inch rounds are 9 pellets in the 2 3/4 and up to 12+ in the 3 inch. That's roughly the equivilent of 9 or 12+ rounds of 38 special bullets. If the first shot gun round doesn't work then you still have the next and so on. Personally, I keep a full tube of Federal LE 00.
It would jam if he shot a certain heavy high velocity pheasant load, and this was a 2 3/4 inch shell. It would and does shoot fine if the load is kept to more normal 12 gauge levels.
Will a 3 1/2" shell fit in a 3" chamber & the bolt close? Generally, yes. Shell sizes are unfolded lengths, not unfired lengths.
If you are only shooting ducks over decoys, you can do just fine with 3-inch loads, and probably even 2 3/4-inch. But if the ducks aren't decoying very well, or you're hunting geese, it's hard to beat the added performance of super magnums, as long as you can handle the recoil.
a 3" chamber will shoot 3" and 2 3/4 just fine, and no it wont cycle one better then the other unless you have a gun with an older gas system, then it may not cycle light target loads well.

Simple answer: If it will shoot 3.5 inch shells safely it will say for 3.5" shells on the gun. If it does not, then it won't. One reason is that 3.5" shells are loaded to a higher pressure than the shorter shells and the guns are proofed to a higher pressure.
