Egg salad is a dish made primarily of chopped hard-boiled eggs and mayonnaise, often including other ingredients such as celery or mustard. It is made mixed with seasonings in the form of herbs, spices and other ingredients, bound with mayonnaise. It is also often used as a topping for a green salad.
The earliest recognizable form of a sandwich may be the Korech or “Hillel sandwich” that is eaten during Jewish Passover. Hillel the Elder, a Jewish leader and rabbi who lived in Jerusalem during the time of King Herod (circa 110 BC), first suggested eating bitter herbs inside unleavened matzo bread.
The sandwich is named after John Montagu, 4th Earl of Sandwich, an eighteenth-century English aristocrat. It is said that he ordered his valet to bring him meat tucked between two pieces of bread. In the US, the sandwich was first promoted as an elaborate meal at supper.
Historians still really aren't sure. The earliest reference I found of the tomato sandwich was in the Virginia Chronicle in 1911, where a man describes his lunch as a tomato sandwich, a slice of watermelon, iced tea, and a slice of coconut cream pie.
The sandwich as we know it was popularized in England in 1762 by John Montagu, the 4th Earl of Sandwich. Legend has it, and most food historians agree, that Montagu had a substantial gambling problem that led him to spend hours on end at the card table.
According a writer named Warren Bobrow, the Tuna Melt was invented in Charleston, South Carolina. Mr Bobrow writes that about 1965, at the Woolworth's lunch counter on King Street, the 'ladies' were working at their assigned tasks while Chef Bo filled orders.

5 Fresh Ways to Eat Hard-Boiled Eggs for Breakfast
- Layer hard-boiled eggs on a breakfast sandwich.
- Sliced atop oatmeal.
- Sliced and added to baked sweet potato.
- Chopped into a breakfast burrito.

If your egg salad turns out too runny, you can add more chopped hard boiled eggs to the mix. You can also put the egg salad back into the refrigerator as the cold can help firm up the mayonnaise, and stir before serving.
Place eggs in a medium pot and cover with cold water by 1 inch. Bring to a boil, then cover the pot and turn the heat off. Let the eggs cook for 9 to 12 minutes, depending on your desired done-ness (see photo). Transfer the eggs to a bowl of ice water and chill for 14 minutes.
Directions
- Place egg in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes.
- Place the chopped eggs in a bowl, and stir in the mayonnaise, mustard and green onion. Season with salt, pepper and paprika.
