Nonpareils are very tiny multi-colored balls made up of sugar and starch. They're also known as Hundreds and Thousands, and are used as a decorative confectionery for desserts. Nonpareils are one of my favorite types of sprinkles for decorating baked goods, but these buggers roll all over the place.
The adjective nonpareil is archaic in contemporary French. Nonpareil is pronounced ohn-pah-rehy in French. Today, a French person who wants to say “having no equal” would say sans pareil, pronounced sahn-pah-rehy .

Round Sprinkles:These can more specifically be referred to as nonpareils. These are those teeny-tiny round balls that can come in a single color or in rainbow. They date back at least to the late 18th-century. It also may be the cutest term to refer to a type of sprinkle.

Even though they are made with just three ingredients and nonpareil sprinkles are usually free of confectioner's glaze, the commercially-produced versions of these candies are rarely vegan. No vegan nonpareils for us.
What are sprinkles made of? Sprinkles are made from a combination of sugar, corn starch, corn syrup and water. They can also contain artificial flavors or colors, depending on the type.

Technically, they are the flower buds of the shrubby caper bush (Capparis spinosa), which grows in and around regions of the Meditterranean. The buds are picked before they flower, dried in the sun, and then packed in salt. It's a labor-intensive process, as they can only be harvested by hand.

Capers also vary in size, from the tiny non-pareilles to surfines, capucines, fines, and capotes—increasing in size and decreasing in value. Caperberries, quite large and usually complete with a stem, are formed when the buds are allowed to open and set fruit.
