Chardonnay has hints of butter and citrus that pair amazingly well with this Chicken Piccata. Sauvignon Blanc has bright citrus and herbal notes that pair nicely with the lemon and parsley found in this dish. Pinot Grigio and Pinot Blanc are a nice match with their crisp minerality and citrus notes.
Piccata Sauce. Most of us first encounter piccata sauce served atop veal or chicken. The sauce's bright, briny, and buttery flavors work well with fish too—particularly salmon or any mild white fish.
Though, it doesn't seem to fit the culinary use of the Italian term which means "to be pounded flat". When used in reference to a way of preparing food, particularly meat or fish, it means "sliced, sautéed, and served in a sauce containing lemon, butter and spices".
This preparation couldn't be simpler: We combine wine and capers in a pan, reduce the liquid, then add olive oil, butter, and lemon juice, and season with salt and pepper. Piccata dishes are traditionally topped with parsley; we like to quickly wilt fresh parsley leaves right in the pan.

Chicken Cacciatore. Cacciatore means hunter in Italian, and alla cacciatora translates to a 'hunter-style' meal with chicken (or rabbit), onions, tomatoes, herbs, vegetables, and usually wine or vinegar.
Place some of the chicken stock on top of the chicken as well, to give it some extra moisture to prevent it from drying out. Cover the chicken piccata with some more aluminum foil and place the dish into an oven preheated to around 250 degrees Fahrenheit.

Go basic with some salt and pepper. Simply sprinkle salt and pepper over your chicken to your tastes, and then cook it however you want to.
Pretty much anything can go with breaded chicken. It's a highly versatile dish. One of my favorites to do with any kind of chicken is garlic parmesan mashed potatoes and then your favorite vegetable.
Heat a thin layer of olive oil in a large skillet over medium-high heat. Coat chicken in egg then bread crumbs and add to pan. Saute until golden and firm, 3 to 4 minutes on each side.
Whether they're brined or salt-packed, all capers should be rinsed before using for cooking to wash off any excess salt and let their delicate flavor shine through. Soak the capers for 5 minutes and then gently rinse them in a sieve. With salt-packed capers, you should repeat this rinsing and soaking 3 or 4 more times.
