Fire Force tries to go for a more grounded world and characters with a major mystery plot. Soul Eater is much more off-the-wall with it's characters and setting but with less of an overarching plot but more radical shifts in art style. Soul Eater has the better characters.
But after all these years, we haven't really had a new season of 'Soul Eater' and that's mainly because the anime ended up going in a direction that was entirely different to the manga. Continuing the original anime story would be too much of a risk and could lead to the series' downfall.

In the ending of the manga, and following the deaths of Medusa and Death, the Witches and DWMA end their war and Death the Kid vows to never make anymore Death Scythes. This ending in the anime has never happened.

The Moon's distinctive look previously appeared in B. Ichi, the manga that Atsushi Ōkubo created before Soul Eater. That is why, as early as Chapter 1, he drew the Moon amid clouds to show it was much closer than in real life and hence could be reached by the Soul Eater characters.
Excalibur is the Legendary Sword, used by King Aruthr, and is the most powerful weapon in the world. Unfortunately, Excalibur is annoying and obnoxious, he sings songs and calls everyone a fool. The only Legendary Blade that is known in both the Manga and Anime is Excalibur.
