Shekla tibs: Sliced meat served in a clay dish. Sliced beef or lamb, pan-fried in butter, garlic and onion, tibs is one of the most popular dishes among Ethiopians. It comes in a variety of forms, varying in type, size or shape of the cuts of meat used, and can range from hot to mild or contain little to no vegetables.

Teff is a gluten-free whole grain that, despite its size (about the size of a poppy seed), is mineral-rich and high in protein. In Ethiopia, teff is ground into a flour and fermented to make injera, a spongy, sourdough flatbread that is soft, porous and thin like a pancake.
