It’s one of the F- keys. One is for dropping ammo, one to drop the weapon. Can’t remember which one it was. F8 or F9 maybe.
Looked through the key bindings a few minutes ago and it’s the F9 key, tested it out by opening my weapon wheel and highlighting a weapon then pressing F9 and sure enough my character dropped it on the ground. You can also look through Settings > Key Bindings > GTA Online, it should be one of the last 2 options listed there.

When your arrested you will drop any guns you are holding. So you might have to repeat this process a few times. Note that it will also take away all your ammo. I think getting busted just removes all your ammo, save for two clips of pistol bullets, and probably your melee weapons.
