Two days is too short a time in my opinion. Cappadocia area is large and there is much to see and do. Take a hot air balloon ride, hike. But if your time is limited, 2 or 3 days is O.K. I recommend taking a balloon ride; rather expensive but well worth it and a thrilling experience.
