Kefir is POSSIBLY SAFE for most adults when taken by mouth for up to 8 weeks. Kefir can cause side effects like bloating, nausea, intestinal cramping, and constipation, especially when use is started.
Water kefir can take on odd smells depending on the sugar and minerals you use. Sometimes the addition of molasses or coconut sugar can cause the water kefir to take on an odd, vomit-like smell. Sometimes water kefir can smell bad when they do not have enough minerals too.
For most people, water kefir can safely be enjoyed with minimal risk of adverse symptoms. Like other probiotic-rich foods, the most common side effects include digestive issues like bloating, nausea, constipation and cramps ( 13 ). These side effects tend to decrease with continued consumption.
But once your brew smells strongly of this, it is best to continue to ferment as usual, but not drink the kefir. Most times it will go away on its own (as it is usually a temporary imbalance in the yeast and bacteria). If not, it is best to discard the grains and start anew.
Shake the vessel from time to time and you may see bubbles floating up from the grains. Are my water kefir grains dead? The easiest test to confirm if water kefir grains are working or not is to add a couple of raisins and allow it to ferment for 3 days or so. If the raisins float, then they are working.
Kefir is rich in protein which helps you feel full for long periods of time. Although, drinking too much kefir can hinder weight loss and even lead to weight gain.
Finished water kefir can be stored as follows: At room temperature (68° to 78°F): 3 to 4 days. In the refrigerator (40° to 45°F): 2 to 3 weeks. In the freezer (0° to 25°F): 1 to 2 months or longer.
If it smells like vinegar or otherwise off, your grains need some rehab. Don't drink kefir water that smells rancid or too sour. If you ordered live kefir grains and they arrive frozen in the winter, simply allow them to defrost at room temperature, and then follow instructions.
Organic Cane Sugar
Because it is not processed as much as table sugar, evaporated cane juice retains more of the nutrients from the sugar cane. This type of sugar is very commonly used for water kefir and makes a sweet (ish) water kefir that is fizzy and good to flavour.Water kefir is typically composed of both lactic and acetic acid bacteria. Lactobacillus and Leuconostoc are the lactic acid bacteria. Then there's the Acetobacter, Gluconobacter and Gluconacetobater which are acetic acid bacteria.
Cultures for Health goes into detail, but basically, alcoholic content of normally-brewed water kefir is lower than 1%. They say that all cultured and fermented foods contain a small amount of naturally occurring alcohol, but it is usually significantly less than 1%.
So not only is this a dairy-free probiotic, it's gluten-free. And even the water kefir grains are “fed” with sugar, very little sugar ends up in the finished product. The water kefir grains actually metabolize (consume) most of the sugar out.
Kombucha tea can contain caffeine, depending on the tea used. Water kefir is more of a general probiotic beverage. However, water kefir contains a greater number of bacteria strains than those found in kombucha. Both beverages are beneficial in aiding natural systems of the body, and both are great for hydration.
Over fermented kefir is more potent
Additional fermenting time will also change the taste, it will become more sour. Water kefir will not change much in appearance. When water kefir is finished, it tastes a bit sweet still. If you prefer it more sour you can over ferment it.Since plain kefir milk will already have a sour smell and taste when fresh, it is harder to tell if kefir milk has gone bad. Look for any changes in color, texture or aroma of the product. Kefir grains will begin to become compromised if left in fresh milk for longer than 24 hours.
The best way to rest water kefir grains it to give them a good rinse and rest them in plain unchlorinated water in the fridge for 2-3 days. It helps reset and refresh them. If you are using a very heavy mineral rich recipe, it may need to be rested as much as once a week.
The ideal environment for water kefir grains is on the counter, at room temperature, being fed with fresh sugar water every 24-48 hours. While taking a break for vacation or unexpected emergencies is necessary from time to time, avoid refrigerating the grains too frequently to keep them at their healthiest.
