DIRECTIONS
- Salt and pepper roast all over.
- Place roast in roasting pan in a pre-heated oven at 450 for 15 minute.
- Add a little water in pan to loosen up juices.
- Turn down oven to 325 and cook for 1 hour and 10 minute.
- Take out and cover with aluminun foil for 30 minute.
Don't add water or liquid and don't cover the roast. Tip: A roasting pan is a shallow pan specifically designed for roasting. It has a rack, which keeps the meat above the juices and allows the heat to circulate around the meat.
Oven Temperature to Slow Cooker
According to Iowa State University Extension and Outreach, the low setting on a slow cooker is generally 190 degrees Fahrenheit and the high setting usually sits at 300 degrees Fahrenheit.The USDA recommends steaks and roasts be cooked to 145°F (medium) and then rested for at least 3 minutes. To ensure food safety, ground beef should be cooked to a minimum 160°F (well done). Be sure to check with a thermometer, as color alone is not a foolproof indicator.
If your heats that well, you can certainly use it for cooking. The one thing to keep in mind is that if it still takes a long time to come up to temperature, you may want to start it on high to get it all heated, and then switch to low for the rest of the cooking time.
Some people worry that cooking foods at a low temperature for a long time in a slow cooker or in a slow oven is unhealthful. But it's OK. Cooking meat for four hours at 250 degrees does not present a health risk and will not "incubate" bacteria. Commercial slow-cookers heat at between 200 and 300 degrees.
Preheat your oven to 250 degrees, cook the roast at that temp for 30 to 45 minutes (I leave it flexible to show you how this recipe melds with your life's needs), and then lower the temp to 200 degrees to cook for an additional 2 to 3 hours.
Use the following as a guideline: Allow 12 to 24 hours to defrost steaks, depending on thickness. Allow 4 to 7 hours per pound to defrost large roasts or thick compact pot roasts. Allow 3 to 5 hours per pound to defrost small roasts or thin pot roasts.
Improperly defrosted meat can result in food poisoning. The USDA suggests not leaving any meat out in the open for more than two hours, or one hour in climates above 90 degrees Fahrenheit. Any meat left too long in temperatures between 40 and 140 degrees Fahrenheit may rapidly develop bacteria.
Put your frozen roast in the refrigerator for one to three days -- five days at the most. A 4-pound cut takes about 24 hours to thaw, but give it extra time if possible, just to be sure.
"The Danger Zone"
A frozen pork roast left out overnight will thaw from the outer layer on through, potentially leaving the outside of your roast in the temperature range where it can be exposed to harmful bacteria.Thaw it out in the refrigerator. It will take a couple days or more. You are not drunk if you can lie on the floor without holding on. Figure about 24-hours for every 4 pounds (about 5-6 days).
Perishable foods should never be thawed on the counter, or in hot water and must not be left at room temperature for more than two hours. When thawing frozen food, it's best to plan ahead and thaw in the refrigerator where it will remain at a safe, constant temperature — at 40 °F or below.
Place the beef (still in its sealed plastic package) into the water, replacing with fresh cold water every 30 minutes. Plan on it taking about 30 minutes per pound to thaw the beef using this method.
Tip: From Frozen Tender Roast
Cover it and put in the oven on low (I put it on at 250 degrees F). I normally put my roast in the oven at 3:00 pm and cook it until supper time at 7:00 pm. When you cook it frozen at a low temp for at least 4 hours, the roast will be the tenderest. You can cut it with a fork!It is perfectly safe to cook meats from frozen. Cooking time will be approximately 50% longer than the recommended time for fully thawed or fresh meat and poultry.
It is possible to pressure-cook smaller cuts of frozen meat and frozen poultry. You can also easily pressure-cook frozen vegetables. To pressure-cook thick pieces of frozen meat like beef or pork roasts, it will take up to one-third more than the normal cooking time, and the results will not taste very good.
Editor: It's not recommended to cook frozen meat in a slow cooker, as there's the risk of harmful bacteria contaminating the meat before it reaches a safe temperature. The best place to thaw your meat is in the refrigerator before cooking it in a slow cooker.
The reverse sear method is easy, almost foolproof, and you can start directly from frozen. Plus it will give you the most amazing, tender meat, cooked perfectly all the way through and with a great crispy crust.
How to defrost meat quickly without a microwave, using hot water.
- STEP ONE: Run kitchen tap water until it's as hot as it can get.
- STEP TWO: Plug the drain and fill your sink about half full with hot water.
- STEP THREE: Submerge your frozen meat in the hot water to defrost.
Roast the tenderloin for 12 to 14 minutes per pound for rare, 14 to 16 minutes per pound for medium-rare or 20 to 25 minutes per pound for a well-done tenderloin. To reach a medium-rare state, allow about two and a half hours of cooking time.
So the formula is simple: four ounces raw beef tenderloin per person, and you can extrapolate endlessly. If you're feeding four people, you will need 1 pound (16 ounces) of raw, trimmed beef tenderloin, which will yield 3 ounces cooked beef per person. A five-pound trimmed tenderloin will feed 20 people, and so on.
The best way to know you're cooking beef tenderloin to the desired doneness is to use a meat thermometer. Insert an oven-going meat thermometer into the thickest part of the roast. When the thermometer reads 135°F, your roast will be medium rare; when it reads 150°F, your tenderloin will be medium.
Follow this tip: When your tenderloin is done cooking, set it aside in a warm place to rest (a few minutes for steaks; around 10 to 15 minutes for whole tenderloins). This lets the meat relax and gives it a chance to redistribute and reabsorb all the juices.
The best way to cook beef tenderloin is a two-step process: sear, then roast. That way, the tenderloin gets a nice crusty brown exterior without overcooking inside. Use enough vegetable oil to just cover the skillet, and heat it over medium-high heat. Pat the tenderloins dry, and then season with salt.

Directions
- Preheat oven to 375 degrees F (190 degrees C). If roast is untied, tie at 3 inch intervals with cotton twine. Place roast in pan, and season with salt, garlic powder, and pepper.
- Roast in oven for 60 minutes (20 minutes per pound). Remove from oven, cover loosely with foil, and let rest for 15 to 20 minutes.
Steps
- Heat oven to 350°F. Arrange roast and all vegetables in ungreased 13x9-inch (3-quart) baking dish. Sprinkle with all remaining ingredients except water. Pour water over top. Cover with foil.
- Bake at 350°F. for 2 to 2 1/2 hours or until beef and vegetables are tender. Serve with pan juices.
