Goliath Tigerfish. With razor-sharp teeth and a reputation for attacking humans, Animal Planet's Jeremy Wade reports the Goliath tigerfish is the “the hardest freshwater fish in the world to hook and land.” That's because of its limited range in the Congo, it's difficult to find, and it shreds bait.
There are several rare fish to find in Animal Crossing: New Horizons and the Golden Trout is certainly one of them. It's only available for six months of the year (that's two three-month spells) and then only in one very specific location on your island.
It's one of the rarest fish in the game and worth 15,000 bells.
Bait. Insects and larvae make up the bulk of a golden trout's diet, but they will take other bait types. Crickets, salmon eggs, mealy worms and nightcrawlers have all been used with success. Nightcrawlers should be cut into small pieces to accommodate the size of most golden trout.
PAFBC: Yes you can eat them. Having caught and filleted a few, their meat is a little more pink/orange that a typical hatchery rainbow, but the flavor is the same. They eat the same pelleted food as all of the other species in the hatchery.

Young rainbow trout often are eaten by a variety of piscivorous (fish-eating) fishes, such as sculpins, smallmouth bass, and larger trout. When in shallow water, they also are fed upon by kingfishers, herons, eagles, osprey, otters, and raccoons. Humans are the most frequent predators of larger rainbows.
The fish is the palomino trout - that golden-hued creation whose genetic mutations make it highly visible against the dark stream bottom. Palominos are actually hybrid rainbow trout that you won't find in the wild - except when placed there by the Pennsylvania Fish Commission.
Wild tiger trout
Wisconsin currently has no stocking program for tiger trout, but the hybrids show up naturally in the state's small streams (in particular in the Driftless Area). As brook trout populations have rebounded, incidences of tiger trout have improved from "exceedingly rare" to a "a bit better than rare."Rainbow trout are predators, and will eat almost anything that they can catch, including insects, small fish, and crustaceans. They will also eat fish eggs, including the eggs of other rainbow trout, and will scavenge on leftover carcasses as well.

Official State Fish of California

And in case you are curious - yes, they are edible. The chances of ever having the opportunity to eat one are very rare.
